- 1 head cauliflower cut into florets
- 1 cup spinach chopped
- 1 cup garbanzo beans drained and rinsed
- ½ cup cranberries dried
- ½ cup red onion
- 1 tablespoon flax seeds
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Preparation:Place cauliflower in a food processor. Process cauliflower until is broken down into rice sized. In a bowl add cauliflower, spinach, garbanzo, red onions, cranberries. Toss with balsamic vinegar, olive oil salt and pepper.
