- ½ cup chicken breast, cooked and shredded
- 1 cup cherry tomatoes
- 1 ounce of small mozzarella cheese balls
- 1 tablespoon pesto
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 1 tablespoon chopped cilantro
- ½ avocado
- 1 tablespoon freshly chopped basil
- 1 tablespoon balsamic glaze
- Salt and pepper
Directions:Combine the tomatoes, chicken, mozzarella, pesto, cilantro, garlic, olive oil, and salt and pepper together in a bowl. Mix well and combine thoroughly. Fill the avocado with this mixture and drizzle on some balsamic glaze. Sprinkle with basil for a delicious and nutritious lunch!
