- 1 cup chicken, cooked and shredded
- ¼ cup avocado mayonnaise
- 1 tsp Dijon mustard
- ¼ cup celery, minced
- 1 Tbs dried cranberries
- 1 cup baby carrots
- 6 butter lettuce leaves
Directions:Combine all the ingredients in a bowl, except the lettuce and carrots. When ready to eat, add the chicken salad to the lettuce leaf and serve with carrots.
