• 6 ounce chicken sausage
  • 1 tablespoon olive oil
  • 4 garlic cloves, crushed and finely chopped
  • ¼ cup chopped onion
  • 1 green bell pepper, chopped
  • 1 sweet potato, diced and lightly boiled
  • 1 tablespoon rosemary
  • 2 cups of sautéed spinach


In a large skillet over medium heat, add olive oil, garlic, spinach, onion, and bell pepper. Cook until soft. Add sweet potato and sausage and let cook for 5 to 10 minutes, browning the sweet potato. Mix and stir gently and let cook for another 5 minutes. Season with salt and pepper and rosemary. Serve with the sautéed spinach.
