- 6 ounce chicken sausage
- 1 tablespoon olive oil
- 4 garlic cloves, crushed and finely chopped
- ¼ cup chopped onion
- 1 green bell pepper, chopped
- 1 sweet potato, diced and lightly boiled
- 1 tablespoon rosemary
- 2 cups of sautéed spinach
Directions:In a large skillet over medium heat, add olive oil, garlic, spinach, onion, and bell pepper. Cook until soft. Add sweet potato and sausage and let cook for 5 to 10 minutes, browning the sweet potato. Mix and stir gently and let cook for another 5 minutes. Season with salt and pepper and rosemary. Serve with the sautéed spinach.
