• 6 ounce breast chicken
  • 1cup mushrooms sliced
  • 1 cup low sodium chicken broth
  • 2 cup baby carrots
  • 1 garlic clove
  • ½ teaspoon thyme
  • Salt and pepper to taste


Preheat a sauté pan over high heat and aa oil. Season the chicken with the salt and pepper and add to pan. Sear chicken on each side. Remove from pan and set aside. In the same pan add the mushrooms, onions ,garlic and thyme sauté for 3 to 4 minutes, add chicken stock. Bring to boil, then reduce heat to medium -low and return chicken to the pan for 10-15 minutes. Serve with baby carrots.
