COLORFUL CHICKEN SALAD
- 6 ounces chicken breast, cut into strips
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon Dijon mustard
- 1 cup chopped romaine lettuce
- ½ cup sliced carrots
- ½ chopped cucumber
- ½ chopped red onion
- ½ teaspoon cilantro
Directions:Sauté the chicken strips in a skillet over medium heat for 5 minutes, until cooked and browned. In a bowl, combine them with the lettuce, carrots, cucumber, red onion, and cilantro. Add oil, salt and pepper, and mustard.
