Ingredients:

  • 1 egg
  • 1 teaspoon freshly chopped mint
  • 2 tablespoons sliced almonds
  • 2 tablespoons almond milk
  • 2 slices of whole wheat or Ezekiel bread
  • 5 sliced strawberries
  • 1 teaspoon ground cinnamon

Directions:

Beat together the egg, milk, and fresh mint in a deep dish. Coat the bread in the mixture, letting each side soak it up. Cook in a non-stick frying pan until lightly browned. Serve and top with strawberries and almonds. Finish off with a sprinkle of cinnamon.
