SALMON PICCATA

Ingredients:

  • 6 oz salmon
  • 1 tablespoon olive oil
  • ¼ cup white wine
  • 1 lemon, juiced
  • 2 garlic cloves
  • 1 bunch fresh dill
  • 1 tablespoon toasted almonds
  • 2 cups green, leafy salad  
  • 1 tablespoon yogurt-based salad dressing  

Directions:

Preheat oven to 350℉. Mix oil, white wine, lemon juice, and garlic together in a small bowl. Pour a small amount of this mixture into a baking pan until the bottom is coated and cover with a layer of dill. Place the salmon on top, sprinkle with any remaining dill and wine marinade. Cover the dish with aluminum foil and bake for 20 minutes. When ready to serve, sprinkle the toasted almonds and serve alongside the salad.
