• 6 ounces salmon fillet
  • 1 tablespoon olive oil
  • 2 lemons, sliced
  • 1 tablespoon dill
  • ½ cup quinoa
  • 1 cup vegetable broth
  • ½ cup frozen mixed vegetables
  • Salt and pepper


Heat a skillet over high. Brush salmon with oil and season with dill, garlic, and salt and pepper. Cook the salmon and lemon slices until the salmon is to your liking. Rinse the quinoa well and cook it in the vegetable broth. Once it begins to boil, add the frozen vegetables. Let simmer until the broth is gone. Serve salmon over quinoa.
