SCALLOPS & ZUCCHINI

Ingredients:

  • 6 oz scallops or shrimp
  • 2 tsp olive oil
  • 2 tap paprika
  • 1 cup zucchini, chopped
  • 1 cup yellow squash, chopped
  • 1 lemon
  • Salt and pepper to taste

Directions:

Preheat the oven to 350°F. Toss the scallops in olive oil with paprika. Season with salt and pepper. Arrange the scallops, zucchini, and yellow squash on a baking dish. Bake in the oven until scallops are fully cooked (about 25 minutes). Now it’s time to eat!
