SCALLOPS & ZUCCHINI
- 6 oz scallops or shrimp
- 2 tsp olive oil
- 2 tap paprika
- 1 cup zucchini, chopped
- 1 cup yellow squash, chopped
- 1 lemon
- Salt and pepper to taste
Directions:Preheat the oven to 350°F. Toss the scallops in olive oil with paprika. Season with salt and pepper. Arrange the scallops, zucchini, and yellow squash on a baking dish. Bake in the oven until scallops are fully cooked (about 25 minutes). Now it’s time to eat!
