SPINACH EGG WHITE SCRAMBLE
- 1 cup egg whites
- ½ cup turkey bacon
- ½ cup spinach
- 1 teaspoon Dijon mustard
- 1 tablespoon pine nuts
- 1 tablespoon water
- Salt and pepper
Directions:In a bowl, mix the egg whites, mustard, water, and salt and pepper. Heat the oil in a non-stick skillet over medium and cook the bacon for about 5 minutes. Remove the bacon and add the eggs, stirring to cook until they reach the desired consistency. Serve with spinach and sprinkle pine nuts on top.
