- 5 oz canned chicken
- 3 tablespoons olive or avocado-based mayonnaise
- ½ teaspoon Dijon mustard
- ¼ red bell pepper
- 1/8 cup carrots, grated
- 1 whole wheat pita
- 4 lettuce leaves, chopped
- ¼ cup cucumber, sliced
- ¼ cup tomatoes, diced
- Salt and pepper to taste
Directions:In a large bowl, mix the mayo, mustard and pepper. Add the chicken, bell pepper and carrots, mixing until well covered. Cut the pita in half and open each side like a pocket. Stuff with the lettuce and cucumber, and then spoon in the chicken mixture. Pure Mediterranean flavor!
