• 5 oz canned chicken
  • 3 tablespoons olive or avocado-based mayonnaise  
  • ½ teaspoon Dijon mustard
  • ¼ red bell pepper
  • 1/8 cup carrots, grated
  • 1 whole wheat pita
  • 4 lettuce leaves, chopped
  • ¼ cup cucumber, sliced
  • ¼ cup tomatoes, diced
  • Salt and pepper to taste


In a large bowl, mix the mayo, mustard and pepper. Add the chicken, bell pepper and carrots, mixing until well covered. Cut the pita in half and open each side like a pocket. Stuff with the lettuce and cucumber, and then spoon in the chicken mixture. Pure Mediterranean flavor!
