• ¾ pound chicken breast
  • ¼ cup fresh basil, chopped
  • ½ cup red bell pepper, chopped
  • ½ cup orange bell pepper, chopped
  • 2 cups spinach  
  • Salt and pepper to taste


Season the chicken breast with basil, salt and pepper. Heat a frying pan over medium-high and add the chicken to cook for about 6 minutes on each side, until well done. Roast the peppers in the same pan until soft and starting to brown. Serve the chicken and peppers on top of spinach. How easy it is to eat healthy and delicious!
