Heart-healthy & colorful vegetable omelette
- 1 cup egg whites
- 1 tablespoon red onion, finely chopped
- 1 tablespoon red bell pepper
- 1 tablespoon green bell pepper
- 1 tablespoon yellow bell pepper
- 1 teaspoon dill, chopped
- 1 garlic clove, minced
- 2 tablespoons raw oatmeal
- 1 teaspoon olive oil
- 1 teaspoon nutmeg
- Salt and pepper to taste
Directions:Heat a skillet over medium and add the olive oil, garlic, onion, bell peppers and oatmeal. Sauté the vegetables until soft. Pour the egg whites in and cook together with the vegetable oat mixture. When done, sprinkle with dill, nutmeg, salt and pepper and serve. All done!
