Quesadilla with avocado and sautéed vegetables


  • 1 spinach tortilla
  • 2 large mushrooms, chopped
  • 1 tablespoon red bell pepper, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon fresh cilantro, chopped
  • ½ avocado, mashed (or guacamole)
  • 5 seedless black olives
  • 1 garlic clove
  • 1 oz mozzarella cheese
  • Salt and pepper  


In a pan with olive oil, sauté the garlic, mushrooms, bell pepper and olives with salt and pepper. When ready, set aside and heat the tortilla. Spread guacamole on half of the tortilla and top with the sautéed vegetables. Sprinkle cilantro and cheese. Fold the tortilla and enjoy!
