Ranchero Turkey Tortillas
- 1 large egg
- 1 tablespoon Monterey Jack cheese, grated
- 1 tablespoon fresh salsa (can use pico de gallo or tomato sauce)
- 2 corn tortillas
- 1 teaspoon fresh coriander
- Cooking spray
- Salt and pepper to taste
Directions:Beat the egg and cook in a small pan with olive oil spray and over medium heat. Add the cheese, salsa and cilantro to top. Serve with tortillas - nutritious and extra delicious!
