Ingredients:

  • ½ cup frozen corn
  • ½ cup frozen green or lima beans
  • 1 cucumber with skin, chopped into small pieces
  • Juice of ½ lemon  
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cilantro or dill (or both), chopped
  • Salt and pepper to taste

Directions:

Let the corn and beans thaw but keep them very cold. Combine all ingredients in a bowl and serve - fresh and flavorful!
