Salmon salad with spinach and arugula
- 2 tablespoons red onion, finely chopped
- 6 ounces cooked salmon (grilled or canned)
- 6 cherry tomatoes
- 4 black olives, pitted
- 1 cup spinach
- 1 cup arugula
- ½ cup fresh strawberries, sliced
- 2 tablespoon of raw, quick-cooking oats
- 2 tablespoon of walnuts
- 1 tablespoons olive oil
- 1 teaspoon mustard
- Salt and pepper to taste
For the dressing, combine the olive oil and mustard in a small bowl. Cut the cooked salmon into chunks and toss all other ingredients together in a large bowl. Add dressing and mix well. Eat well too!
