Scrambled egg whites and avocado toast


  • Egg whites from 1-2 eggs 
  • Non-stick cooking oil (spray) 
  • 1 slice Ezequiel toast 
  • 1 slice avocado 
  • 1 teaspoon chopped cilantro
  • 1 tablespoon sliced almonds 



Toast the bread and set aside. Spray a pan with nonstick cooking oil and heat over medium. Whisk egg whites and add to the pan once it is hot. Stir with a spatula to scramble. When cooked, add egg whites to the top of the toast, and top this with avocado, cilantro, and sliced almonds. What a breakfast!
