• 1 cup radish, sliced 
  • 1 cup apple, chopped 
  • 1 teaspoon olive oil 
  • 1 tablespoon cilantro 
  • 8 ounces shrimp, peeled and cleaned 
  • 2 tablespoons feta cheese, crumbled 
  • 6 cups romaine lettuce, chopped 



  • 2 tablespoons lime, juiced 
  • 1 tablespoons olive oil 
  • 2 dashes mustard 
  • Salt and pepper to taste 



First, season the shrimp with salt and pepper, then add them to a pan with the olive oil. Cook at medium heat for 2-3 minutes on each side, until the shrimp is pink and thoroughly cooked. Set aside. 

For the dressing, whisk together all ingredients and set aside. 

For the salad, chop the lettuce and mix with the remaining ingredients minus the feta and cilantro. Then add the shrimp and toss with the dressing. Sprinkle feta and cilantro on top at the end. So good, and good for you too!
