• 1 canned tuna  
  • ½ avocado
  • Juice from ½ lime or lemon
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ½ shallot, finely chopped  
  • 2 tablespoons coriander, finely chopped  
  • ½ seedless jalapeño
  • ½ cup cherry tomatoes
  • 1 cup spinach leaves
  • 2 large Romaine lettuce leaves  
  • Salt and pepper to taste


In a container, mash the tuna and avocado together. Add the lime juice, cumin, garlic, jalapeño, shallot, cilantro, and tomatoes and mix well. Season with salt and pepper. On top of the lettuce leaves, layer half of the spinach and tuna guac on each. Fold up the leaves like a burrito wrap and enjoy.
