- 1 teaspoon olive oil
- 2 cloves garlic, minced
- ½ pound ground turkey
- 2 tblsp of raisins
- 2 tablespoon of green olives
- ½ cup mushrooms
- 1 cup marinara sauce
- 2 cups zucchini spiralized into noodles
- ½ cup mozzarella
- 1 tablespoon parmesan cheese
In a large saucepan on medium heat, cook the chopped garlic in olive oil on low heat for 2 minutes. Add the turkey, turn heat up to medium, and cook until the meat is no longer pink, about 10 minutes. Add the marina sauce, raisins, and olives. Let the mixture simmer in the pan for another 5-6 minutes. Remove from heat.
Preheat the oven to 425 °F.
Add the uncooked zucchini noodles to the pan and stir to combine all the ingredients. Transfer to baking dish and top evenly with mozzarella cheese. Place in the oven and bake for 15 minutes. Remove and sprinkle the parmesan cheese on top just before serving. You’re going to love it!
