- ½ cup egg whites
- ½ cup mushrooms, sliced
- 1 tablespoon fresh red bell pepper, diced
- 1 tablespoon chives, chopped
- 1 tablespoon coriander or parsley, chopped or dry
- 1 ¼ ounce low-fat Swiss cheese
- Salt and pepper to taste
Directions:Heat a frying pan over medium heat and add all the ingredients except the egg whites. Cook until soft. Add the whites, stirring well to combine. Turn off the heat when cooked, sprinkling cheese on top to melt. There you have it, a very tasty and heart healthy breakfast!
