Zucchini omelette with vegetables
- 1 egg
- 1 slice of Ezekiel bread
- 1 sausage, sliced
- 1 tablespoon extra-virgin olive oil
- 1 small red onion, sliced
- 1 zucchini, sliced
- A pinch of thyme (fresh or dried)
- ½ cup black beans, cooked
- Salt and pepper to taste
Directions:In a small pan, add the oil and cook the sausage for about 10 minutes. Add the zucchini and black beans over medium heat and cook until soft. In a bowl, beat the eggs with salt, pepper, thyme and add it to the frying pan with the remaining vegetables. Cook for 3 minutes to incorporate. Serve with toasted Ezekiel bread. Let's have breakfast!
