Bittersweet Raspberry Pork
- 6 ounces of lean pork meat
- 3 garlic cloves
- 1 tablespoon of extra virgin olive oil
- 1 tablespoon of dry wine
- 1/2 teaspoon of paprika
- salt and pepper
For the salad:
- 1 tomato
- Lettuce leaves
- 1/2 cup of radish
- 1/2 diced red onion
For the dressing:
- ¼ cup of extra virgin olive oil
- ½ cup of red or balsamic vinegar
- 1 teaspoon of Dijon Mustard
- ½ cup of raspberries
- 1 teaspoon of raspberry jelly
In a small bowl add the salt, the paprika, the pepper, the garlic and the dry wine. Add the pork meat. Grease the pan with extra virgin olive oil and heat it. Place the seasoned pork in the pan and cook it for 10 minutes, until it gets brown.
Meanwhile, prepare the salad by mixing the tomato, lettuce, radish and onion in a large bowl. In a smaller bowl, mix all the dressing ingredients, then add them to the salad and toss.
