Caribbean meat & potatoes
- 1 pound of meat cut into fillets
- 1 teaspoon of sea salt
- ¼ teaspoon of ground pepper
- 1 spring onion
- 3 tablespoons of bitter orange juice
- 3 tablespoons of extra virgin olive oil
- 4 tablespoons of tomato sauce
- 4 tablespoons of pureed peppers
- ½ cup of dry wine
- 1 medium sweet potato
- ½ teaspoon of butter
Preparation:Season the meat with the sea salt, pepper and chives. Fry in oil before adding the remaining ingredients. Cover the pan and let cook until soft. Meanwhile, bake the sweet potato at 350 °F for 15 minutes. Serve the beef with the sweet potato and Bon Appetit!
