Couscous with roasted vegetables
- 3 cups of chopped broccoli
- 1 red bell pepper
- 1 ½ cups of peeled and chopped red onion
- 6 teaspoons of sesame oil
- ½ tablespoon of black pepper
- ½ teaspoon of salt
- 1 ½ cups of couscous
- 2 teaspoons of balsamic vinegar
Preheat the oven to 425°F. Place the broccoli, bell pepper and red onion on a baking sheet. Drizzle 2 tablespoons of sesame oil on top and sprinkle salt and pepper. Bake in the oven for 15 minutes, until the vegetables are soft and golden.
While the veggies bake, cook the couscous according to the package instructions. Once everything is ready, mix it all together with vinegar and salt and pepper to taste. Yummy!
