Dill Salmon with Walnut

Ingredients:

  • 3 ounces of salmon filets with skin  
  • 3 cups of walnuts  
  • 6 tablespoons of croutons
  • 6 tablespoons of lemon juice
  • 3 tablespoons of extra virgin olive oil
  • 3 tablespoons of fresh dill  
  • Salt and Pepper
  • 2 tablespoons dijon mustard

 

Preparation:

For the Sauce:
Pulse the walnuts in a food processor or a small blender. Add the croutons, lemon juice, olive oil and dill. Process until finely chopped. Add salt and pepper.

For the Salmon: 
Spread mustard over the salmon filets and place in an oven-safe dish. Spoon a tablespoon of the sauce over the salmon and cover with aluminum foil. Roast at 350 F° for 10 to 15 minutes. Before serving, sprinkle with another teaspoon of lemon juice.


As a side dish, this goes great with ½ cup of cooked quinoa or 1 cup of mixed veggies. Bon appetit!
