Egg & broccoli super burrito

Ingredients:

  • 2 eggs (or 1 yolk and 2 whites)
  • ½ cup of diced broccoli  
  • ¼ cup diced tomatoes
  • ¼ cup diced onion
  • 1 clove of garlic, grated
  • 1 whole wheat tortilla
  • 1 teaspoon of olive oil  
  • Salt and pepper to taste
  • ½ cup of grated cheese

Preparation:

Heat the olive oil in a large frying pan over medium heat. Add the onion and garlic. Sauté for about 3 minutes before adding the tomato and broccoli. Mix well and sauté for another 2 minutes. Meanwhile, beat the eggs together in a separate cup. Add salt and pepper to taste. Add the eggs to the pan and cook well until the eggs are completely done. Spread the eggs over the whole wheat tortilla and top with cheese. Fold the sides and continue rolling up to form the burrito. Let's start the day with flavor!
