Pico de Gallo Egg Tacos
- 2 eggs
- 1 teaspoon of extra virgin olive oil
- 2 tablespoons of pico de gallo (diced tomato, chopped coriander, red onion, red pepper, lemon juice, salt and pepper)
- 2 tablespoons of diced avocado
- 1 whole tortilla
- Salt and pepper to taste
Preparation:Grease a pan with extra virgin olive oil. Add eggs and pico de gallo. Mix well and cook until eggs are stiff and scrambled. Place the eggs and salsa on the tortilla and top with avocado slices. Sprinkle salt and pepper to taste.
