Pinto, red bean and quinoa salad
- 1 cup of cooked red beans
- ¼ cup of red bell pepper
- ¼ cup of green bell pepper
- ¼ cup of cherry tomatoes
- ½ cup of quinoa
- ½ small avocado
- 1 teaspoon of Dijon mustard
- Pinch of salt and pepper
Preparation:Strain the cooked beans and set aside. Cook the quinoa in a cup of water for about 10 minutes. Meanwhile, chop the vegetables into small squares. Mix the mustard, extra virgin olive oil, vinegar, salt and pepper in a bowl to make the dressing. In a larger bowl, add the quinoa, vegetables and red beans. Pour the dressing all over and get ready to enjoy this tasty and colorful salad!
