Place all the ingredients in a blender and mix well. Heat a non-stick frying pan over medium heat. Once hot, add 1/3 cup of the mixture. Spread in a circle and cook for about 2 minutes or until the bottom of the pancake is golden brown. Carefully flip and cook the other side. Repeat with remaining batter until done. Serve hot with honey and fresh fruit like blueberries or strawberries for healthy sweetness!
