Ingredients:

  • 2 eggs  
  • 1/2 cup of spinach of vegetables of your choice  
  • 1/2 cup of chopped tomatoes  
  • 2 tablespoons of chopped onion  
  • 1 turmeric capsule
  • 1 teaspoon of extra virgin olive oil  
  • 1 whole toast
  • 1 teaspoon of pumpkin seeds  
  • 1 cup of berries
  • Pepper
  • Salt

 

Preparation:

In a hot pan add the olive oil, tomato, onion and spinach. Turn down the burner to medium and stir occasionally, continuing until all the liquid steams off. Add the eggs and stir for 4 minutes. Remove from heat and sprinkle with the pumpkin seeds. Serve immediately with a side of whole grain toast and the berries. Tasty!
