Scrambled Eggs with an Asian Twist
- 2 eggs
- 1/2 diced tomato
- 1/2 chopped onion
- 1 sliced garlic clove
- 1/2 sliced shiitake mushrooms
- Salt and pepper to taste
- 1 tortilla or whole bread slice
- 1 tablespoon of extra virgin olive oil
- 1 turmeric capsule
- 2 tablespoons of smashed avocado (guacamole)
- ½ banana or one orange
Heat a pan to medium and then add olive oil, eggs, tomato, onion, garlic, and mushrooms. Sprinkle in the contents of the turmeric capsule and cook for 5 minutes, stirring occasionally, until the eggs are stiff and scrambled. Season with salt and pepper.
On a separate plate spread the toast or tortilla with guacamole and top with the scramble. Enjoy with a banana or an orange.
