Shrimp, corn & cilantro Italian-Mex Bowl
- 7 shrimp
- 1 teaspoon olive oil
- ½ cup frozen corn
- 1 tomato, diced
- 2 teaspoons coriander
- 2 cloves garlic
- 1 red onion, diced
- Lemon juice
- 1 sweet potato
- 1 Santo Remedio turmeric capsule
- 1 pinch of salt
- 1 pinch of pepper
Preparation:Heat olive oil in a frying pan over medium heat. Cook the shrimp and all ingredients for 2 to 3 minutes, stirring frequently until the shrimp are done. Remove from heat and sprinkle with cilantro, then dig in!
