Chicken Strips with Veggie Quinoa
- 6 oz of chicken cut into strips
- 2 tbsp olive oil
- 1 cup mixed frozen veggies
- 2 tbsp of raisins
- 2 tbsp of pistachios crushed
- 2 leeks sliced
- ½ small red onion
- 2 garlic cloves minced
- 1 cup of quinoa
In a medium skillet over low heat, add olive oil, garlic, raisins, onion, leeks, veggies, and sauté. Add chicken strips and cook thoroughly. Cook quinoa as instructed in package substituting the water for broth for added flavor. Serve chicken strips over quinoa and garnish with pistachios. Enjoy!
