Fresh from the Sea Crab Salad
- 4 oz crab meat
- 2 tbsp avocado mayonnaise
- ½ tomato diced
- 2 tbsp cilantro
- ½ cup onion chopped
- 6 cups raw baby spinach
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Mix crabmeat with avocado mayonnaise, tomatoes, cilantro, and onion. Blend well. Place mixture over baby spinach and drizzle with balsamic vinegar, salt, and pepper to taste. Enjoy!
