Guacamole Egg Toast
- 1 egg
- 1 slices Ezequiel or whole multi grain bread
- 2 slices of tomatoes
- 8-10 spinach leaves
- 2 oz of guacamole
Bring a quart of water to a boil, add the egg, and cover the lid. After 5 minutes, remove from heat.
Toast the bread and spread guacamole serve with tomatoes slices and spinach. Cut egg into slices and top the toast.
