Marinera Turkey with Spiral Zucchini
- 8 oz of lean turkey
- 3 cloves of garlic minced
- 2 tbsp olive oil
- 2 tbsp red onions
- 2 leeks sliced
- 2 tbsp raisins
- 2 tbsp olives
- ½ cup mushrooms
- 1 cup spinach
- 1 cup marinera sauce
- 2 cups zucchini spiraled into noodles
- ½ cup fresh mozzarella cheese shredded
- 1 tbsp parmesan cheese
In a medium skillet in low heat, add olive oil and sauté the onions, leeks, raisins, olives, mushrooms, spinach, and turkey until cooked. Add spiral zucchini and marinera sauce. Top with mozzarella and parmesan cheese. Cover until mozzarella cheese melts. Serve and enjoy!
