Salmon with mashed cauliflower
- 4 oz wild salmon
- 1 cup cauliflower
- 1 cup mushrooms chopped
- 1 sweet potato
- 2 tbsp olive oil
- 1 tbsp avocado butter
- 1 cup of low-fat milk
- 1 tbsp onion chopped
- Salt and black pepper to taste
Bring two cups of salted water to a boil. Add cauliflower and sweet potatoes until they have softened. Drain water and mash the cauliflower. Add milk, butter, salt, and pepper to taste. Heat oil in a pan and fry the onion and mushrooms. Add salmon and fry until it browns. Serve with sweet potato and mashed cauliflower.
