Spinach and a Sunny Egg
- 1 tablespoon olive oil
- ½ cup onion chopped
- 2 cups raw spinach
- 1 pinch salt
- 1 egg
On a skillet, heat oil in medium heat. Cook chopped onion, half of the raw spinach, and season with salt, and cook until spinach is wilted. Move veggies to one side and cook the egg. Serve on a plate with the rest of the fresh spinach. Delicious!
